A glimpse behind the scenes at The Farmhouse Kitchen & Pantry
Out on the marshes, life follows a slower, steadier rhythm — shaped by the seasons, the landscape, and the needs of our dairy herd. Every day, our work is influenced by something many people don’t see: water.
Keeping the Marshes Dry with Black Mill Pump
Our farm sits on land that’s 2.2 feet below sea level — which means water management is essential. At the heart of it all is Black Mill Pump, a steam-powered pumping station that’s still doing its job after all these years.
Together with a network of ditches, dykes, and sluices, this vital system keeps the marshes drained and the grazing land in perfect condition. Without it, the fields would be flooded — and the cows wouldn’t have their rich pasture to graze on from early spring through to late autumn.

Grazing on Marshland: Nature’s Perfect Pasture
From March to November, our dairy herd grazes on the nutrient-rich grasses of the marshes. The unique conditions of this ancient land offer a diverse mix of forage that keeps our cows healthy and content — and it’s that wellbeing you can taste in every drop of milk.
We believe great dairy starts with great grazing. By keeping our herd out on pasture for as much of the year as possible, we’re staying true to a gentler, more natural way of farming.

Silage Season: Storing Sunshine for Winter
As summer rolls on, it’s time to cut and clamp a carefully balanced mix of clover and grass. This is turned into silage — a fermented forage that provides energy and nutrients during the colder months when fresh grazing isn’t available.
Silage is a cornerstone of winter feeding on dairy farms like ours. It helps maintain milk quality and keeps the herd strong and healthy, even when the weather turns.

From Pasture to Pantry
Everything we do here at The Farmhouse Kitchen & Pantry is part of a bigger story — one that begins in the fields and ends on your plate. Whether it’s the milk in your tea, the cream in your scone, or the cheese in your sandwich, it all starts with well-fed cows and well-tended land.
By supporting local farms, you’re helping to keep this traditional way of life alive — where nature, nurture, and nourishment go hand in hand.
